Characterization of the relationship between metabolites and elements of meat from four Tibetan sheep breeds through untargeted metabolomics and multi-element analysis

摘要: The relationship between metabolites and elements in longissimus dorsi muscles of Gangba, Huoerba, Duoma, and Sewa Tibetan sheep breeds is characterized by untargeted metabolomics and multi-element analysis. Ultra-highperformance liquid chromatography-tandem mass spectrometry (UHPLC-MS/MS) was used to identify various metabolites including lipids, amino acids, and other functional compounds. The metabolomics analysis indicated that 828 metabolites were shared in all groups, with lipids and carnitines being the primary differential metabolites among the meat in the Gangba group and the others. Moreover, the multi-element analysis revealed that the proportion of 19 elements was different for each group, and the contents of Cu and Se in the Gangba and Huoerba groups were higher than that in the Duoma and Sewa groups. The correlation analysis indicated that Se, As, and Cr contents exhibited a great relation with lipids and carnitines, implying the trace elements existing in sheep meat might regulate their metabolism. This work provides a novel insight into the quality characteristics of Tibetan sheep meat and contributes to understanding the links between metabolites and trace elements, inspiring the establishment of a method to predict mineral element levels by metabolites and the development of functional Tibetan sheep meat products.
