Postharvest UV-A treatment promotes mango fruit pigmentation and ripening in a dose-dependent manner

摘要: Anthocyanin, carotenoid, and chlorophyll are the predominant pigments determining the coloration of mango fruit, and ripening is one of the most crucial developmental processes for fruit. Fruit pigmentation and ripening are regulated by light; however, the effect of ultraviolet-A (UV-A) on mango fruit pigmentation and ripening is still unknown. In this study, 'Guifei' mangoes at the green-mature stage were subjected to white light alone (control) or white light combined with low, medium, and high doses of UV-A irradiation, namely UV-AL, UV-AM, and UV-AH, respectively. The content of pigments, reactive oxygen species (ROS), antioxidants, and cell wall components; light signal and pigment metabolism-related gene expression; and the activity of antioxidant and pectin-degradation enzymes were measured. The results demonstrated that UV-A promoted the coloration in mango fruit peel by inducing the accumulation of anthocyanin and carotenoid and the degradation of chlorophyll and also increased the carotenoid content in flesh, with the more pronounced effect by UV-AH treatment. The expression of key light signal and pigment metabolism-related genes, including MiHY5, MiMYB1, MiANS, MiBCH, MiSGR, and MiSGR1, was up-regulated by UV-A. UV-A promoted ROS accumulation and cell wall degradation but also activated the antioxidative system in mango fruit. This study provides a practical solution for improving peel coloration in mango production and offers new insights into postharvest ripening strategies.
