Assessment Method of Beef Quality Based on Image Analysis

摘要: The method for inspecting beef quality was studied by using image analysis technology. Some transverse section of rib-eye from 12th to 13th intercostals of cattle was stored in low temperature for one day, seven days and fourteen days, and then the shear stress and Lab color component were measured by digital photos respectively. Using the max-variance algorithm method of R threshold of RGB to separate the fat flecks on an image, excluding the noise flecks smaller than particular diameter by setting threshold score, the area ratio of fat to beef was counted. The average intensity of beef color was calculated by setting nine samplings in the image. The results showed that the area ratio of fat to beef and beef color were obviously different for the treatment of one day, seven days and fourteen days. With the increasing duration of storage, the area ratio of fat to beef and the shear stress of beef declined while the color intensity and beef tenderness enhanced. As such, image analysis can be used as an accurate, simple and quick method of quality inspection.
