Metabolomic profiling of litchi cultivars reveals key metabolites associated with fruit development and quality

摘要: Litchi is popular worldwide for its attractive appearance, exotic flavor, and rich nutrition. The physical and biochemical characteristics of two litchi cultivars, Litchi chinensis Sonn. cv. Huaizhi (HZ) and Litchi chinensis Sonn. cv. Guiwei (GW), were studied. In HZ, the total phenolic and total flavonoid content increased from the green stage to the turning stage and then decreased during the red stage. However, in GW, the total phenolic and total flavonoid content showed a downward trend throughout fruit development. A great number of differentially accumulated metabolites (DAMs), including amino acids, flavonoids, and alkaloids, were identified in the seed, pulp, and pericarp of two litchi cultivars, as well as during the growth and development of HZ litchi. In addition, 17 common DAMs could be found to differentiate the seed, pulp, and pericarp of HZ and GW cultivars. Furthermore, 27 common DAMs were found in the pericarp of HZ during the green, turning, and red stages. These common DAMs primarily consisted of amino acids and flavonoids, which were enriched in the pathways of "D-amino acid metabolism" and "phenylalanine metabolism". The content of procyanidin B2, which was abundant in the HZ pericarp, showed a declining trend with the increase of fruit maturity, suggesting that proanthocyanidin B2 plays a key role in litchi pericarp quality. This study contributes to a deeper understanding of the metabolic dynamics in litchi cultivars and provide a foundation for further research on improving litchi quality and nutritional value.
