Identification of characteristic lipids of Tan lamb and their potential health benefits

摘要: Increasing evidence highlights the beneficial effects of dietary lipids on human health, and understanding the nutritional and bioactive properties of characteristic lipids in high-quality agri-food products can further advance biomarker-driven personalized nutrition. Here we characterize the lipidomic landscape of Tan lamb using UPLCQ-Extractive-MS/MS, identifying 1521 lipid species and revealing significant differences in glycerolipid (GL) abundance between the Longissimus Dorsi and Rectus Femoris. Further differential lipid analysis identified 50 lipid biomarkers of Tan lamb, all of which exhibited higher levels compared to those in Oula and Bahan. Among them, 35 characteristic lipid species remained unchanged throughout a 7-day chilled storage, indicating their potential as reliable biomarkers. Functional analysis highlighted ether-linked PE (37:1e) + Na, PE (16:0p_18:1) + H, and PE (18:0p_18:1) + H, as well as SM(t36:1), suggesting their potential roles in neuroprotection, immune modulation, and metabolic health. These findings provide new insights into the lipid composition of Tan sheep, with implications for precision nutrition and dietary recommendations.
