Assessment of pesticide residues in tomatoes: Home processing impacts and health risk analysis

摘要: This study analyzed the degradation and health risks of six pesticides (prothioconazole, tebuconazole, triadimefon, paclobutrazol, difenoconazole, cyflumetofen) and metabolites in tomatoes during cultivation and home processing. Field trials in Beijing and Shandong, China, showed first-order degradation kinetics with pesticide half-lives ranging from 2.24-26.66 days (Beijing) and 1.90-14.15 days (Shandong). Household processing methods (washing, peeling, simmering, sterilization) were evaluated using UPLC-MS/MS. Washing reduced the contents of paclobutrazol, tebuconazole, prothioconazole, cyflumetofen, difenoconazole, triadimefon, triadimenol, and CGA205375 by 36.48 %, 30.63 %, 22.93 %, 37.52 %, 49.58 %, 33.19 %, 12.39 %, and 82.08 %, respectively. Peeling further decreased the residues of these pesticides. All processing factors were < 1, confirming consistent residue depletion. The risk assessment performed using the Hazard Quotient (HQ) and Hazard Index (HI) models revealed that the HQ values were all below 1, while the HI exceeded 1 in specific vulnerable populations, including infants, the elderly, and pregnant women. These groups should therefore exercise caution when consuming processed tomato products. This study contributed valuable insights into the degradation patterns and risk assessment associated with these six pesticides in tomatoes, from cultivation to processing, thereby emphasizing the scientific significance of safeguarding human health against potential hazardous effects.
