Aloe gel polysaccharides and ascorbic acid promote collagen synthesis in mirror carp (Cyprinus carpio var. specularis)

摘要: This study aimed to assess the effects of dietary aloe gel polysaccharides and vitamin C (VC) on collagen content and flesh quality in mirror carp. A total of 240 fish were divided into control and treatment groups, receiving diets supplemented with aloe gel polysaccharides, VC, or both. After eight weeks, collagen content in skin and muscle significantly increased. Aloe gel polysaccharides and VC promoted collagen synthesis by upregulating TGF-beta/Smads genes in the skin and TOR pathway genes in the muscle. Aloe gel polysaccharides also improved meat flavor by reducing bitter amino acids. Proteomic analysis revealed that the regulatory effects of aloe gel polysaccharides and VC involved multiple cellular processes, particularly protein processing in the endoplasmic reticulum and ECM-receptor interaction pathways. Notably, aloe gel polysaccharides may increase the availability of precursors for glycosaminoglycan synthesis for collagen assembly. Overall, these findings suggest aloe gel polysaccharides and VC as promising dietary strategies to promote collagen synthesis.
