Behavior of commonly used pesticides and their metabolites in banana fruits from cultivation, storage, maturation to crisp chips processing and health risk assessment

摘要: Bananas are widely favored by consumers. However, the presence of pesticide residues can pose risks to their quality and safety. The dynamics of pesticide residues and their metabolites in banana fruits during cultivation, storage, maturation and crisp chips processing remain poorly understood. Our results demonstrate that the halflives of seven pesticides ranged from 4.91 to 35.19 days in whole bananas and from 2.24 to 70.01 days in pulp, respectively. Furthermore, the half-lives of the most pesticides during banana storage were significantly higher than those observed during maturation and under field conditions. The processing factors after peeling, low temperature vacuum frying and high temperature deep frying were 0.06-0.38, 0.34-0.67 and 0.19-0.41, respectively. In contrast, the residues of pyraclostrobin, thiamethoxam and difenoconazole were concentrated by vacuum freeze drying. Pesticide physico-chemical parameters of molecular weight and octanol-water partition coefficient were significantly influenced on peeling. The partial metabolites of imidacloprid, thiamethoxam, and pyraclostrobin were quantified using UPLC-MS/MS. All targeted pesticides exhibited acceptable dietary risks. However, young people require particularly careful risk control. This study provides insights into the behavior of pesticide residues in banana fruits from farm to table and holds theoretical significance for ensuring the quality and safety of bananas.
