摘要: Browning of potato frequently occurs during processing, which has an adverse effect on the nutritional and commercial values of the processed products. This study was aimed at investiging the inhibition effects of two strains of Lactobacillus sp. and Eremothecium sp. isolated from the serofluid on polyphenol oxidase (PPO) activity of potato. In this study it was suggested that the suspensions of two strains at different concentrations possess inhibiting abilities and contain mixed-type inhibitors of PPO by methods of Lineweaver Burk plot. The inhibition constants of suspensions of two strains were determined to be K-i = 0.0103 moL/L, K-is = 0.1149 moL/L, and K-i = 0.0011 moL/L, K-is = 0.0249 moL/L, respectively.
