摘要: Strawberry cultivars with white flesh are special in production of China. For better use of these types, the volatile organic compounds in them were analysed here. The 36 most abundant VOCs synthesized by these cultivars were identified using head space solid phase microextraction and evaluated by gas chromatography-mass spectrometry. Ethyl hexanoate (17.28%) and ethyl butanoate (15.91%) as well as linalool (4.70%), (E)-2-hexenal (24.86%) and DMMF (mesifurane) (4.37%) are the main VOCs of 'White Princess' strawberry. In 'Tokun' strawberry, gamma-decalactone might provide peach-like odor, and octyl acetate (17.18%) and ethyl hexanoate (10.54%) were also the most important VOCs for sensory impressions identified. While in 'Xiaobai' strawberry, (E)-2-hexenal was quantitatively the main compound, representing 53.23% of the total VOCs analysed. Methyl hexanoate (5.98%) and methyl butanoate (5.55%) were also found at higher concentrations. The composition of VOCs attributed to the different aroma of the three cultivars.
