Identification of Phenolic Compounds in Walnut (Juglans regia L) Seeds by High Performance Liquid Chromatography-Electrospray Ionization Mass Spectrometry

摘要: High performance liquid chromatography coupled with electrospray ionization mass spectrometry was used to study the phenolics profile of Persian walnut (Juglans regia L.) seeds. Four isomers of HHDP (Hexahydroxydiphenoyl)-glucopyranose, 2 isomers of valoneoyl-glucopyranose, 2 isomers of di-HHDP-glucopyranose, 3 isomers of galloy-valoneoyl-glucopyranose and 2 isomers of digalloy-glucopyranose were found to be present in Persian walnut seeds with a number of, as yet, unknown compounds. The results illustrate that the MS(n) was a particularly powerful tool for the analysis of phenolic compounds in Persian walnut seeds.
