摘要: Electronic nose is an emerging non-destructive testing (NDT) technology. The working principle, data processing and prediction of precision and presence of electronic nose were elaborated. The recent research progress of electronic nose in the evaluation of meat freshness, quality distinction of meat and meat product, monitoring of objectionable constituent in meat and detection of meat adulteration was reviewed. At last, the development trend of electronic nose was discussed in brief.
