摘要: Mechanical summer pruning is vital for wine grape management. However, the optimal canopy thickness is still unclear in Northwest China. In this study, the aroma profiles of wines from four canopy thicknesses (40, 60, 80, and 100 cm) of 'Syrah' and 'Merlot' grown in the Tianshan Mountain's North Foothill of Xinjiang, China, were compared. The results show that for 'Syrah', 60 cm treatment is beneficial for the accumulation of aroma compounds especially acetic acid, 4-methylpentylalcohol, trans-3-hexenol, ethyl isobutyrate, D-limonene, and citronellol, while 80 cm of canopy thickness is advantageous to total aroma compounds collection for 'Merlot', such as ethyl 2-hydroxypropionate,1-hexanol,3-methylpentanol,trans-3-hexenol,hexyl acetate,and phenethyl acetate. Meanwhile, sensory analysis confirmed that there are higher aroma concentrations and taste intensity in the 60 cm treatment group for 'Syrah' and the 80 cm treatment group for 'Merlot'. Therefore, different canopy thickness management is necessary between 'Syrah' and 'Merlot'.
