摘要: In the field of modern plant research and agricultural economics, fruits hold a prominent position, mainly because of their nutritional richness and economic value. However, they invariably come into contact with a number of biotic and abiotic stresses during the stages of growth and post-harvest handling, which often significantly lower the yield and quality of the fruits. Moreover, among these stresses, cold-induced damage is the most common. The aim of this review is to clarify the molecular mechanisms behind fruit cold tolerance, taking into account the significance of transcription factors in cold adaptation as well as the influence of relevant functional proteins or genes. Concurrently, this review synthesizes a series of physical and chemical treatments used in the post-harvest handling stage, aiming to provide references for related research on fruit cold tolerance.
