摘要: Developing natural delivery carriers suitable for food processing system is recognized as an effective strategy to solve the limiting factors such as low bioavailability of natural bioactive substances. Soybean protein-based nanoparticles are considered as potential natural delivery carriers because of their structural characteristics. In this paper, different preparation methods of different types of soybean protein-based nanoparticles are reviewed. This review also discusses the auxiliary function of soybean protein-based nanoparticles as delivery carriers to improve the accessibility of natural active substances. This review provides a theoretical reference for the wide application of natural bioactive substances in food and medicine, and also provides some suggestions for the high-value application of soybean protein.
