摘要: The processing conditions of cook tank prepared roast beef rounds were monitored as part of a HACCP plan. Data from the processing conditions were compared to three measures of quality of the cooked roast beef-microbiological safety, yield and color.The HACCP collected processing data was useful in directing improvements in the quality of cooked roast beef.
