Elemental and stable isotopic signatures for dynamic traceability of genuine and "bathing" cultured Yangcheng Eriocheir sinensis crabs

摘要: This study examines whether the "bathing" culture of Chinese mitten crabs Eriocheir sinensis outside the Yangcheng Lake area converges with the origin characteristics of crabs from Yangcheng Lake and Kunshan Ponds. Inductively coupled plasma mass spectrometry (ICP-MS) and stable isotope ratio mass spectrometry (IRMS) were used to analyze mineral elements and stable isotopes in crabs at various stages of "bathing". The results indicated a dynamic transformation in the origin characteristics of "bathed" crabs; however, full convergence with genuine crabs was not achieved. Notably, disparities persisted between genuine crabs and "bathed" crabs. The combination of mineral elements and stable isotopes exhibited a discrimination accuracy of 95 % and 81.3 % between genuine crabs and "bathed crabs" from Kunshan Ponds and the Yangcheng Lake during each period of "bathing", respectively, which was higher than that using either method alone. This suggests limitations in altering original characteristics through "bathing". The combination of mineral elements and stable isotopes provides promising avenues for origin identification and understanding changes in crab characteristics during the "bathing" process. These findings highlight the complexities of crab culture practices and have implications for quality control and origin authentication in the crab industry.
