摘要: In this work, a single factor and orthogonal experimental design was utilised to optimise extraction condition of bioactive peptide from the Sphauerocerpus grailis by neutral protease hydrolysis method and the degree of hydrolysis was taken as evaluation index of the extraction yield. Oxidation activity of bioactive peptide was studied. The results showed that the optimum extraction condition was the ratio of enzyme to substrate concentration of 5% and enzymolysis for 1.5 h at 37 degrees C. Under this condition, the degree of hydrolysis reached up to 30%. The antioxidant experimental results showed the DPPH radical scavenging activity increased with the bioactive peptide concentration until a maximum value of 53.28% at 1.0 mg/ml and the maximum scavenging rate of hydroxyl radical could reach 75.12% at 1.0 mg/ml.
