Water Absorption Isotherm and State Diagram of Freeze-Dried North Pacific Squid (Todarodes pacificus Steenstrup)

摘要: The state diagram of freeze-dried squid (Todarodes pacificus Steenstrup) was analyzed by using differential scanning calorimetry. The maximal freeze-concentrated solute (X-s') of freeze-dried squids was 68.6% with corresponding glass transition temperature T-g' of 54.75 C. Absorption isotherms of freeze-dried squid were determined at room temperature (25 degrees C) using isopiestic method, and the data were modeled using Brunauer-Emmett-Teller (BET) and Guggenheim-Anderson-de Boer (GAB) equations. The BET and the GAB monolayer moisture contents were 0.0716 and 0.108 kg H2O kg(-1) squid (dry basis), respectively. The established water absorption isotherm and state diagram are useful as practical guidelines for the production of dried squids.
