Assessment of contents and health risk of trace elements of canned mollusks in Eastern China

摘要: Mollusks, as filter-feeding animals, are an important source of elements. Increasingly contaminated marine animals necessitate an evaluation of the content of trace elements in canned mollusks to ensure food safety and human health. This study investigated that effect of storage temperature (4 degrees C, 10 degrees C, 25 degrees C, and 30 degrees C) and time (12 month) on the content of trace elements in canned mollusks and assess their potential health risks for human. In total, 144 canned mollusk products from Eastern China were analyzed for trace elements content and assessed for their carcinogenic (CR) and non-carcinogenic risk (Target Hazard Quotient (THQ)). The mean levels of the trace elements were in the following order: Fe > Al > Zn > Se > Pb. The content of trace elements in all samples was within their corresponding tolerable limits. The two-way analysis of variance (ANOVA) revealed significant differences in the interaction of storage temperature and time that affected Fe, Zn, Al, Mn, Pb and Sn content. THQ values for all samples are <1 that indicate no cancer risk. The results illustrate that daily consumption of canned mollusks from Eastern China will not pose human health risks. It is necessary to establish monitoring programs for trace elements of canned mollusks during storage. the results of this study is of benefit to ensure the quality and economic interests of canned mollusks.
