Effects of Temperature on Biogenic Amine Production of Four Popular Fish Species Sold in Southern China

摘要: In this work, the effects of storage temperature on the biogenic amine (BA) formation in four fish species, horse mackerel, blue scad, golden thread fish and mackerel have been studied. Eight biogenic amines, including Histamine (HIS), Typtamine(TRP), Cadaverine(CAD), 2-Phenylethylamine(2-PHE), Spermine (SPM), Tyramine(TYR), Putrescine(PUT) and Spermidine (SPD), were determined in the four fish species during storage at-18℃, 4℃, 20℃ and fluctuating temperature. The biogenic amines were analyzed by reverse phase HPLC with fluorescence detector after pre-column derivation with dansyl chloride. The results indicated that except in horse mackerel, all BA levels in fish samples were less than 50mg/kg stored at-18℃ for 9 months. PUT and CAD increased quite rapidly when the fish samples were stored at 4℃ and 20℃ for a week while HIS in horse mackerel and mackerel exceed the safe level (50mg/kg)established by the FDA of the United States. BA contents grew rapidly in the four fish samples during storage at fluctuating temperature between 4℃ and 20℃ for a week. More specifically, HIS in horse mackerel (S4.16mg/kg), blue scad (59.48mg/kg) and mackerel (56.94mg/kg) exceed the safe level at the second day of the storage while PUT and CAD reached approximately 200mg/kg in the four fish samples. Thus, low temperature storage and transport of fish are required to maintain a BA-free state.
